Brussels Sprouts with Kale and Apple

Not everyone likes brussels sprouts, but its bitter taste creates a delicious combination with the sweet apples, sour vinegar and umami from the cheese.

Variations

The original recipe uses Gorgonzola, which is more expensive and gives more flavour complexity to the dish

Prep

15 min

  1. Dice onion and mince garlic
  2. Cut apples into cubes
  3. Halve Brussels Sprouts
  4. Pre-heat oven to 200°C

Cook

15 + 20 min

Cook kale

use a large pan ~4 min

Add pasta to the kale

cook ~3 min more

Add brussels sprouts to kale and pasta

cook ~5 min more, so pasta, kale and sprouts are almost done

In the meantime, sauté onion

~3 min

Add garlic and apples

stir ~3 min

Add (soy) cream and vinegar

season with salt and pepper ~3 min

oven

Add everything into an oven dish and top with cheese and walnuts

~20 min at 200°C
