Cheesy Penne with Arugula

This dish is easiest to make in a large pan so you can add the penne to the sauce. Add the arugula & mozzarella at the last minute to keep more flavour, and to make sure the mozzarella doesn’t string too much. It doesn't take long to prep or cook and also works well cold as a salad.

Ingredients

Penne (whole wheat)
Zucchini
Sun-dried tomatoes
Canned tomatoes
Mozzarella
Arugula

Oregano

Prep

  1. Dice onion
  2. Cut zucchini into small cubes
  3. Cut sun-dried tomatoes in small strips
  4. Cut mozzarella into small cubes

Cook

20 min

Cook pasta

~10 min

In the meantime, sauté onion

medium/high heat ~3 min

Add zucchini, sun-dried tomatoes

stir ~3 min

Add canned tomatoes and oregano

bring to a simmer ~5 min

Add drained cooked pasta

turn off heat, stir ~1 min

Add arugula and mozzarella

stir slightly ~1 min
