Chickpea and Lemon Wraps

These wraps are inspired by Middle Eastern flavors. The juicy tomatoes together with the chickpeas and crunchy walnuts give this dish a delicious texture.

Shallots
Cherry tomatoes
Spinach
Canned chickpeas
Walnuts

(Plant-based) yoghurt
Lemon (juice and zest)
Chilli powder
Cumin
Turmeric
Paprika powder
Garlic
Coriander

Prep

  1. Dice shallots and mince garlic
  2. Halve cherry tomatoes
  3. Chop walnuts
  4. Chop coriander

Cook

15 min

pan 1b

Sauté shallots, garlic, cumin, turmeric and paprika powder

medium/high heat ~3 min

Add half of lemon juice and all of lemon zest, chickpeas, and tomatoes

drain chickpeas before adding, medium heat ~5 min

In a bowl, mix yoghurt, other half of lemon juice, coriander, chili powder

season with salt and pepper to taste ~2 min

Add walnuts to chickpea mix

stir ~2 min

Heat up wraps

~2 min

Serve the wraps with yoghurt, fresh spinach leaves, and chickpea mix
