
Lazy Hummus Pasta
The hummus gives this quick and easy pasta dish a creamy sauce while the oven transforms three simple ingredients into the toppings: crunchy almonds, with roasted zucchini, and juicy tomatoes. Use your favorite flavor of hummus or just regular.

- Zucchini in halbierte Scheiben schneiden
- Kirschtomaten halbieren
- Backofen auf 200°C vorheizen

Bake cherry tomatoes, zucchini, and almonds on a tray in the oven
sprinkle with olive oil, salt, and pepper to taste, stir halfway through ~20 min at 200°C

drain the pasta and save some of the cooking liquid
Mix the hummus with the pasta
add some cooking liquid so you create a creamy sauce
add plenty of pepper and taste whether it needs more salt
Serve the pasta with rocket and the roasted veggies and almonds
