Sweet Potato with Oyster Mushroom Salad

The mix of peas and oyster mushrooms is delicious in a salad. Combined with sweet potato fries and baguette you've got a filling and easy dinner.

Feldsalat

Baguette
Frische Petersilie
Rote Zwiebel
Sweet chilli sauce or other hot sauce (optional)

Vorbereitung

  1. Backofen auf 200°C vorheizen
  2. Zwiebel würfeln
  3. Tear mushrooms into strips
  4. Cut potatoes into thin wedges or strips
  5. Cut baguette in half
  6. Petersilie fein hacken

Kochen

Sprinkle potatoes with olive oil and bake on oven tray

~20 Min auf 200°C

pan 1b

Sauté onions, mushrooms and soy sauce

auf mittlerer/hohen Hitze ~3 Min

Add peas and parsley

auf mittlerer/hoher Hitze ~5 Min

Move potatoes to the side and add the baguette

~12 min at 200°C

Serve baguette with lettuce and mushroom mix, chilli sauce to taste and the potatoes on the side
