As a teenager, the only thing I could make for dinner was tortellini with ready-made tomato sauce. This is a homage to that time, upgraded for more taste and healthy veggies.
Tortellini (spinach or other)
Frozen green beans
3 TBL sp
- Dice onion and mince garlic
- Cut leek into rings
medium/high heat ~2 min
Cook tortellini, after ~5 minutes add green beans
(tortellini often need around 15 mins, beans need around 10 mins)
stir ~2 min, season with salt and pepper
Add tomatoes, garlic and pesto
stir and bring to boil, then simmer ~10 min, taste and add more salt and pepper if needed
You could try different sauces and vegetables that are used in other recipes, such as pesto with (soy)cream.
