
Minty Aubergine Wraps
The first time I grilled aubergines in a sandwich maker, my dad walked into the kitchen and asked whether I was cooking meat, that’s how great it smelled.
Ingredients

Tomatoes
Canned black beans
Canned corn

Hummus
Fresh mint
Ginger
Cumin
Chilli
Red onion
Prep

- Dice onion
- Mince or grate ginger
- Cut tomatoes into big cubes
- Cut the mint leaves
Cook
15 min

Grill aubergines
Option 1: cut aubergines into four thick slices, sprinkle with olive oil and salt, and grill in a sandwich maker. Then cut into strips.
Option 2: cut aubergines into strips or cubes, sprinkle with olive oil and salt, and grill in oven or frying pan


Sauté onion
medium/high heat ~3 min
Add chilli, cumin, and ginger
~2 min
Add tomatoes, mint, corn and black beans
stir and simmer ~8 min, season with salt and pepper
Serve the wraps with hummus, mint, the grilled aubergine and the sauce

I cook with eggplant, aubergines, as often as I can, but I’ve never cooked them in the sanfwich maker. Great idea. I can tell from the ingredients this recipe us delicious. Thanks for sharing Frank.
