
Apple Pear Crumble with Caramelised Cashews
A classic dessert that never disappoints. The warm crumble and sticky, soft fruit served with vanilla ice cream is a match made in heaven. And to give it that extra crunchy Christmas touch, we’re serving it with caramalised cashews.

If you want to make a fully plant-based version, choose plant-based butter, agave or maple syrup instead of honey and select a plant-based ice-cream or simply leave the ice-cream out.
The crumble and/or caramelised cashews can be prepared fully the day before. Reheat the crumble to serve warm. No need to reheat the caramelised cashews.
Reheat crumble at destination. Don't take vanilla ice cream on a long train ride 😉

For the apple pear mix

Ginger powder
Nutmeg
Cornstarch
For the crumble
40 g
40 g
Fine oats (Yespers)
Flour
1 tea sp
40 g

Sugar
(Plant-based) butter
For the ice cream and caramelised cashews
50 g
600 ml
Cashews (Johnny Cashew)
Ice cream (vanilla)
2 TBL sp
1 tea sp

(Plant-based) butter

Prep
5 min
- Peel and cut apples and pears into 2 cm blocks
- Preheat oven to 180°C
Cook
25 min + 30 min oven
In a bowl, mix oats, flour, cinnamon, sugar for the crumble
Add cold butter and rub together until it forms crumbles
use your fingertips to rub together and place in the fridge
Add apple, pear, honey, cinnamon, ginger powder, and nutmeg to an oven form
mix well
Add cornstarch
mix well and spread evenly over the oven form

Bake apple pear crumble
~30 min at 180°C

In the meantime, melt butter and honey for the caramelised cashews
low heat, use a fork to whisk until combined ~3 min
Turn heat off and add cashews
mix well so the cashews are coated
Spread the coated cashews over an oven tray lined with baking paper

Roast the cashews simultaneously with the apple pear crumble in the oven
~10 min at 180°C
after 5 mins toss so they are roasted on all sides
In a small bowl, add roasted cashews and sugar
mix well so the cashews are coated
Spread the coated cashews over the used oven tray so they cool down
Serve the warm apple pear crumble with vanilla ice cream and caramelised cashews
