
Black Bean Sweet Potato Wraps
Wraps are always easy and perfect for a mid-week meal, these ones are no different. What is different however, are the flavors compared to usual wraps recipes. In short: very nice, with a little spice!

Canned black beans
Spinach

Creme fraiche (or oat fraiche)
Cumin
Chilli flakes
Smoked paprika powder
Lime
Onions
Fresh coriander

- Cut onions into half rings
- Peel and cut sweet potatoes into 1 cm cubes
- Chop coriander
Cook
20 min

Cook sweet potato
~5 min

Sauté onion
medium/high heat ~5 min
Add cumin, chilli flakes, paprika powder
stir ~2 min
Add sweet potatoes
~4 min
Add black beans and spinach
drain black beans before adding, stir until spinach wilts ~5 min
Turn off heat and squeeze lime to taste
season with salt and pepper
Spread creme fraiche on the wraps and fill with sweet potato mix and fresh coriander
