Brussels Sprouts Traybake

Besides cooking the potatoes if they're not pre-boiled, the rest of the dish comes together easily in the oven. The winter vegetables are topped with crunchy pecans and tangy feta.

Brussels sprouts

100 gr

Oregano (dried)
Thyme (dried)
Rosemary (dried)

  1. Cut potatoes into 2 cm cubes
  2. Peel pumpkin and cut into 2 cm cubes
  3. Clean and halve brussels sprouts
  4. Pre-heat oven to 200°C

Cook potatoes

~10 min

Combine all the veggies and potatoes on an oven tray, mix and coat everything with plenty of olive oil and the dried herbs.

season with salt and pepper to taste, spread out across the tray ~2 min

Spread pecans and crumble feta over the top


Bake in the oven

~30 min at 200°C
