Brussels Sprouts with Apple

Not everyone likes brussels sprouts, but its bitter taste creates a delicious combination with the sweet apples, sour vinegar and umami from the cheese.

Farfalle
Apples (Elstar)
Brussels Sprouts
Walnuts
Spinach

100 ml
2 tea sp
100 g

2 cloves

(Soy) cream
White wine vinegar
Cheese (grated)
Onion yellow
Garlic

Variations

The original recipe uses Gorgonzola, which is more expensive and gives more flavour complexity to the dish

Prep

15 min

  1. Dice onion and mince garlic
  2. Cut apples into cubes
  3. Halve Brussels Sprouts
  4. Pre-heat oven to 200°C

Cook

10 + 20 min

Cook pasta

After 3 min add brussels sprouts

cook for ~5 more min so pasta and sprouts are almost done

Sauté onion

~3 min

Add garlic, apples and spinach

Stir and let spinach cook in/thaw ~3 min

Add (soy) cream and vinegar

season with salt and pepper ~3 min

oven

Add everything into an oven dish and top with cheese and walnuts

~20 min at 200°C
