Celeriac Sweet Potato Mash

A typically Dutch ‘stamppot’ recipe with a twist: the potato mash is made with sweet potatoes and celeriac. After some cutting work it’s a very simple dish for cold days. Using a slightly sour apple gives a great balance to rich taste of the mushrooms.

Sweet potato
Celeriac
Chestnut mushrooms
Pumpkin seeds
Apple (Goudrenet)

750 ml
1 TBL sp

Bouillon (vegetable)
Vinegar (white wine)
Red onions
(Plant-based) Butter or margarine
Fresh thyme
Fresh rosemary

Prep

15 min

  1. Peel and cut the sweet potato into slices
  2. Peel and cut the celeriac into 2 cm cubes
    (you can also do the next steps while cooking the potato and celeriac)
  3. Dice onions
  4. Cut the mushrooms into quarters
  5. Cut the apple into cubes

Cook

20 min

Make bouillon

Cook sweet potato, celeriac, bouillon and rosemary

add lid ~15 min

Sauté mushrooms, onion and thyme

medium/high heat ~8 min

In the meantime, toast pumpkin seeds

~3 min, set aside

pan 2

Drain and mash the potatoes and celeriac

~2 min

Add butter, vinegar and apple

season with salt and pepper to taste, mix ~2 min

    The flavors of this dish are really nice… I wouldn’t have thought to make this combination. This will be a dish we make again!

    One deviation we made: as the sweet potato and celeriac are cooked together in the bouillon, we didn’t drain it, but kept it all together in the mash to add additional flavor. 👍

    Wat zou een alternatief kunnen zijn voor de champignons? deze vind ik echt niet lekker
    Kan het recht ook aangepast voor bv 2x (2 personen)
