
Garlic Lime Spaghetti
A fresh pasta recipe with an Asian touch! You could use less garlic if you want to but make sure to use plenty of lime juice. If you're not a fan of aubergine you could replace it with zucchini.

Spaghetti
Peanuts
Aubergine
Broccoli
200 ml

4 cloves
(Soy) cream
Lime
Chilli (flakes)
Garlic
Fresh coriander
Prep

- Mince garlic
- Cut aubergine into 1 cm cubes
- Cut broccoli into florets
- Cut the fresh coriander
Cook
20 min

Sauté aubergine
high heat ~5 min, take out aubergine and put aside

Cook pasta
~10 min

Sauté peanuts, garlic and chilli flakes in plenty of oil
low/medium heat ~5 min, season with salt and pepper

Cook broccoli
~5 min, then drain under cold water

Add (soy) cream
mix well ~3 min
Add the aubergine, broccoli and pasta
mix well ~3 min
Add lime juice
squeeze the lime and let everything simmer until warm
~3 min, taste and add salt and pepper if needed
Garnish with coriander
