
Pak Choi Stir-fry
This version of a Chinese pak choi stir-fry gets its fresh and satisfying flavour from the combination of soy sauce and lime juice.

Lime

Tip
Use a stainless steel or cast iron pan instead of a non-stick pan to avoid health risks of non-stick pans at very high temperatures.

- Mince ginger and garlic
- Cut red chilli pepper finely, leave out the seeds if you want a milder taste
- Cut spring onions
- Cut pak choi stem into strips, cut leaves into large strips
- Cut mushrooms into slices

Cook rice

Sauté pak choi without oil
heat up the pan as hot as possible before adding the pak choi, sauté pak choi and set aside ~2 min
After setting pak choi aside, sauté mushrooms in the same pan in some oil
high heat ~3 min
Add red chilli pepper, ginger, garlic, spring onions, peanuts
~3 min
Add soy sauce
~1 min
Add pak choi and lime juice
season with salt and pepper, add lime juice to taste ~3 min
Serve the rice with the stir-fry
