Pomegranate and Feta Salad

A simple salad with delicious sweet and sour flavors. And because it’s Christmas we’ve added some feta.

Once the dressing is mixed through the salad, the rocket easily loses texture. Make sure you only mix the dressing at the very end.

If you can't get hold of fresh pomegranate seeds, either buy a whole fruit or frozen seeds. In case of the first, be careful when opening it for the seeds as it can easily stain. Also add some extra time. We've tried the frozen pomegranate seeds as well, but we preferred the taste of the fresh ones!

Easy to take with you

Simply keep the salad dressing apart until serving.

Ingredients

6 servings - as side dish

Rocket
Apple (Elstar)
Walnuts
Pomegranate seeds
Feta

6 TBL sp
4 TBL sp
2 tea sp

Olive oil
Balsamic vinegar
Honey

Prep

  1. Cut apple into thin slices
  2. Cut feta into small cubes
  3. Chop walnuts

Assemble the salad: in a large salad bowl, add rocket, pomegranate seeds, apple, nuts, and feta

mix

Mix the salad dressing: in a small bowl, add olive oil, balsamic vinegar and honey

use a fork to whisk the ingredients together

Drizzle the dressing over top of the salad and serve
