Roti Wraps

These wraps are inspired by Surinamese roti. The green beans and potatoes give some great texture to the wrap. The tomato puree and bouillon make a nice sauce that’s neither watery or dry.

Ingredients

Wraps (whole wheat)
Green beans
Potatoes (floury)
Eggs
Bell pepper

200 ml
70 g
2 TBL sp

Bouillon (vegetable)
Tomato paste
Curry powder (garam masala)
Red chilli peppers
Onion
Garlic

Prep

  1. Dice onion and mince garlic
  2. Peel potatoes and cut into 1 cm cubes
  3. Cut bell pepper into small pieces
  4. Cut chili peppers into thin slices

Cook

15 min

Make bouillon

~1 min

Boil eggs

bring water to a boil, put eggs in with a spoon

after ~8 min, take out and quickly run under some cold water to make them easier to peel

Sauté onion, bell pepper, garlic and chilli pepper

medium/high heat ~2 min

Add curry powder and tomato paste

stir ~1 min

Add bouillon, potatoes and green beans

cover with a lid, add extra water if needed ~15 min

Heat up wraps

~2 min

Serve the wraps with filling and eggs quartered on top
