
Sauerkraut Potato Mash
The vegetables do all the work in this recipe and combine lots of different flavours. The sweetness of the apple balances the sauerkraut and the mushrooms add a nice umami taste. Even someone who usually doesn't like sauerkraut liked it.

Sweet potatoes
Apples
Walnuts
Chestnut mushrooms
Sauerkraut
Endive
2 TBL sp
100 ml
Soy sauce
Water
Prep

- Peel sweet potatoes and cut into 1 cm thick slices
- Cut mushrooms into slices
- Cut apples into small cubes
- Crush walnuts into small pieces
Cook
25 min

Cook sauerkraut
in its own liquid or add 100ml water, put the lid on ~15 min

Cook sweet potatoes
use a large pan as more will be added later ~8 min

In the meantime, sauté mushrooms
medium heat, until mushrooms shrink and moisture is gone ~5 min, season with salt and pepper
Add soy sauce
lower heat, add 1 TBL sp water before adding soy sauce to prevent soy sauce from evaporating ~2 min

In the meantime, mash the sweet potatoes
until the mash has a coarse structure

Add apple and walnuts
~2 min

Drain sauerkraut and stir through the sweet potato mash
mix well ~2 min
Mash fresh endive through the sweet potato mash
season with salt and pepper, mix well ~2 min
Serve the mashed potatoes with the mushrooms on top
Too sour for your taste? Grate or cut an apple and stir through the sweet potato mash.
Wat een lekkere combinatie! En de sojasaus bij kastanjechampignons is ook een blijvertje, voor een lekkere jus.
De walnoten doe ik er pas op het allerlaatste bij, omdat ze na een tijdje wat wrang van smaak worden in de stamppot.
