Smokey Chilli

In the late 1800s, the chilli queens of San Antonio created chilli con carne. They entertained the plaza and supported their families in a time when women weren't supposed to. Hopefully this recipe can inspire you to also do something that isn't supposed to be: a delicious chilli sin carne. The secret ingredient is coffee! You won’t taste it at the end, but it is an essential ingredient to get the ‘smokey’ taste.

Ingredients

4-5 servings

Canned tomatoes
Black beans
Spring onions

Bread and/or rice

100 ml

Coffee

Cumin
Chilli
Cinnamon
Smoked paprika powder

Onion
Garlic

An original Aztec chilli recipe includes a bit of cocoa powder. You can also add rice when you have to fill extra hungry mouths.

Prep

  1. Dice onion and mince garlic
  2. Set coffee
  3. Cut spring onions into rings

Cook

30 min

pan 1 or 2

Sauté onion

medium heat ~3 min

Add chilli, paprika powder, cumin and garlic

~3 min

Add tomatoes, cinnamon and coffee

simmer ~15 min

Add black beans

drain before adding, simmer with lid on ~10 min

Serve with bread and spring onions

    I assume by cooking instruction that this two cans of black beans?
    and is the aquafaba drained off?
    Usually approximately 240g drained beans per can so drained weight total approx.480g?

      Hi Libby! Yes, that’s correct. The aquafaba is indeed drained off. I will improve that in the instructions 🙂

    Loved this recipe!! Great smokey flavor and the coffee is gives it a good depth of flavour. Its great with rice.

    Dit is echt de lekkerste chilli ooit! Echt een favoriet bij ons, veel houdbare ingrediënten dus gemakkelijk in huis en zelfs veel lekkerder dan de meeste chili’s met vlees…
