
Sweet Potato and Lentil Curry
This one-pot curry is inspired by one of BBC Good Food's most popular recipes. By cooking the red lentils (don't use canned lentils) in the sauce it becomes a savoury stew with plenty of protein and fibre. You could also replace the spices with a Thai red curry paste.

Red lentils
Spinach
Peanuts

Water
Ginger
Peanut butter
Curry powder
Chilli flakes
Lemongrass
Laos
Lime

- Mince garlic and dice onion
- Grate ginger
- Peel sweet potatoes and cut into 1 cm cubes
Cook

Sauté onion
medium heat ~3 min
Add ginger and garlic
medium heat ~2 min
Add curry powder, chilli flakes, lemongrass and laos
medium heat ~1 min
Add coconut milk, water, peanut butter, lentils and sweet potatoes
mix well, cover with a lid, lower heat, simmer and stir occasionally ~12 min
Add spinach and lime juice
add spinach and squeeze the lime and let everything simmer until warm ~3 min
taste and add salt and pepper if needed
Garnish with peanuts
Lekker. Als de zoete aardappelen tenminste gaar zijn. Die hebben echt veel meer suddertijd nodig. Even voorgaren helpt ook. Het gerecht ziet er ook mooi uit.
Ha Thea, we hopen dit opgelost te hebben door aan de instructies toe te voegen ze echt in 1 cm blokjes te snijden en de deksel erop te doen na het toevoegen. Gelukkig smaakte het (uiteindelijk) wel goed!🙂

Really nice tasty recipe. Would change the cooking times a bit though, as the sweet potato and the lentils were still a bit hard. I’d suggest 5 minutes with only sweet potato, another 15 with the lentils, and then the 3 minutes with the spinach as per the current recipe.
