Yellow Cauliflower Curry

Transform your cauliflower into a creamy curry with this easy recipe. Fragrant spices, spinach and chickpeas come together for a flavorful meal.

Coconut milk
Water
Ginger (fresh)
Soy sauce
Curry powder
Turmeric
Cumin
Red chilli pepper
Fresh coriander
Lime
Garlic
Onion

Tip

If you make less portions, leave away the water and use the whole can of coconut milk.

Prep

  1. Mince garlic and ginger
  2. Dice onion
  3. Chop chilli pepper finely
  4. Cut cauliflower into florets

Cook

40 min

Cook rice

~10 min

Sauté onion

medium/high heat, until softened ~3 min

Add garlic and ginger

~1 min

Add turmeric, curry powder, cumin, chilli pepper and soy sauce

stir ~2 min

Add coconut milk, water and cauliflower florets

cover with a lid and bring to a boil, let it simmer ~8 min

Add the spinach and chickpeas

drain chickpeas, stir and simmer uncovered, season with salt and pepper ~5 min

Add lime juice to taste

mix ~1 min

Serve with coriander and lime wedges
